Sunday Brunch

Nothing says brunch to me more than salmon bagels. So, that's exactly what my husband and I had this weekend. Fluffy bagels, cool cream cheese, and smoked salmon with all the fixings...I'm drooling just typing about it lol! It's so easy to prepare and always makes a meal feel special and elegant. I switch it up sometimes and make my own scallion or veggie cream cheese. I use Philadelphia cream cheese and add chopped scallions, or add a chopped radish, carrot, and bell pepper for a delicious homemade garden veggie cream cheese that's sure to be a crowd pleaser. Scallion Cream Cheese

8oz cream cheese

2 scallions chopped (white and green parts)

tablespoon of heavy cream


With a paddle attachment, beat the cream cheese in an electric mixer on medium speed until it's softened and smooth—about 30 seconds. Next, add the chopped scallions and allow them to incorporate. This only takes a few seconds. If the mixture seems too thick, add a little of the heavy cream to thin it out. Spoon it out into a bowl and serve!


Vegetable Cream Cheese

8oz cream cheese

1/4 bell pepper, finely chopped (whatever color you like)

1/2 large carrot, finely chopped

1 radish, finely chopped

1 scallion chopped (white and green parts)

tablespoon of heavy cream


Follow the Scallion Cream Cheese recipe from above, adding all chopped veggies after softening the cream cheese. This version can also be thinned out with a splash of heavy cream if needed.


*This recipe would also be great with fresh dill or chives. Feel free to substitute or add whatever your favorite veggies are*
