5-Ingredient Mushroom Pasta

Spending more time at home than EVER, I've been watching a lot of cooking shows to keep me sane and inspired. I recently came across this gem-of-a-recipe from Chef Jamie Oliver's show "Jamie's Quick & Easy Food" for mushroom pasta, and it is insanely good! All you need is: Mushrooms (whichever kind you like), pasta (also whichever type you prefer), garlic, crème fraiche, and parmesan cheese. The good news is, you most likely have these ingredients hanging around your house anyway! Check out the recipe below. As always, happy cooking & eating! :-)

Mushroom Pasta

*This provides 2 portions*

1 cup dried pasta

2 cloves of garlic

2 cups mixed mushrooms

1/4 cup Parmesan cheese

2 heaped tablespoons crème fraîche

*I added fresh thyme leaves to mine for garnish, but feel free to omit*


Cook the pasta in a pan of boiling salted water according to the packet instructions, then drain, reserving a mugful of cooking water. Meanwhile, peel and finely slice the garlic. Place it in a large non-stick frying pan on a medium-high heat with ½ a tablespoon of olive oil, followed 1 minute later by the mushrooms, tearing up any larger ones. Season with sea salt and black pepper, and cook for 8 minutes, or until golden, tossing regularly. Toss the drained pasta into the mushroom pan with a splash of reserved cooking water. Finely grate in most of the Parmesan, stir in the crème fraîche, taste, season to perfection, and dish up, finishing with a final grating of Parmesan.
