Healthy Weekday Meals

If you haven’t noticed already, I cook a mix of decadent and super healthy food. Sometimes I feel like food blogs focus solely on one direction or the other—which is great, but for me, I like to focus on both. The reason for this is because, this is how I eat. I’m not an over-the-top indulgent foodie, but I’m not a health nut either. It’s all about moderation. I choose to eat healthy, satisfying meals during the week, so I can enjoy those indulgent meals (and drinks!) I crave on the weekends and not feel guilty about it. The following is one of my heathy/reboot go-to’s that I depend on during the week. It's healthy, versatile, and best of all, easy to prepare. As always, happy cooking & eating


Kale Salad with Grilled Chicken, Avocado, Pepitas, Queso Fresco and Cilantro-Avocado Dressing


I don't have a formal recipe for the salad, because lets face it, it's pretty self-explanatory, and you can choose whatever greens you like, but I do have a recipe for the Cilantro-Avocado dressing. The dressing is the real star of this super salad that ties all the flavors together. This dressing is not only great on salads, but would be fantastic served with fish tacos, as a dip with crudité, or any protein/veg combo—get creative!. The preparation couldn't be simpler too. Just blend the ingredients below in a Cuisinart, and you'll have a healthy, delicious dressing that's ready to go!


Cilantro-Avocado Dressing

One Avocado

1/4 cup sour cream, crème fraiche or Greek yogurt

1/2 cup of water (or more, depending on the consistency)

1 cup cilantro leaves

1 clove of minced garlic

1 teaspoon salt

juice of 1/2 lime
